Gopchang refers to the small intestines of cattle or pigs and is also the name for a Korean grilled dish made from these intestines, known as gopchang-gui.
In Korean cuisine, gopchang can be prepared in various ways: stewed in a hot pot (gopchang-jeongol), grilled over a barbecue (gopchang-gui), boiled in soup with other intestines (naejang-tang), or made into a sausage (sundae).
